Meat is not eaten on Good Friday. There are no special dishes that I know of. You could try:

SEAFOOD cooked simply, Sicilian style, Sciacca (Misto di pesce in tegame con pomodoro)

PESCE CUCINATO AL CRUDO FISH COOKED SIMPLY WITH TOMATOES AND MINT

KING GEORGE WHITING and A SAUCE MADE WITH CAPERS AND ANCHOVIES
