MUSSELS (Cozze) IN BRODETTO (Mussels in a little broth)

IMG_2797It turned out rather well and we ate it with oven toasted bread rubbed and baked with extra virgin olive oil and garlic.

There were four separate components:

  • a tomato salsa – extra virgin olive oil, fresh garlic cloves, fresh oregano and a little rosemary,
  • steamed mussels (cozze), most taken out of their shells…. a little white wine and a little fish stock,

  • a soffritto of celery, chopped fennel, spring onions and baby carrots,

I do not know. I used Italian methods and ingredients and I guess that it could have been made in any part of Italy. Maybe in the South a little chilli would be added.

And we liked it.

DUCK AND MUSHROOM RAGÙ

A duck ragù is nothing new, but it always seems to be special. Pappardelle is the pasta of choice for game and duck.

I bought a whole duck, dismembered it and trimmed away the obvious fat. I cooked the duck for the ragù over 2 days because ducks can be very fatty and I wanted to remove some of the fat.

I left the cooked duck overnight and the liquid jellied (in the meantime the flavours also intensified) and the fat rose to the top making it easier for me to remove most of I with a spoon. I used some of the duck fat to sauté the mushrooms.

1 duck
for the soffritto: 1 onion, 1 carrot,1 stalk of celery
fresh rosemary, bay leaves
½ cup of diced tomatoes or 2 tablespoons of tomato paste
2 cups dry red wine
3 cups chicken stock
salt and black pepper
250g mushrooms…on this occasion I used brown mushrooms.
2 cloves of garlic, crushed
fresh thyme and parsley

Wipe the duck pieces to dry them as much as possible.

Heat a heavy based casserole and over medium heat add the duck skin-side down and fry until browned and fat renders (6-9 minutes).

Drain most of the fat. Turn and fry until browned (2-3 minutes), then set aside.

To the same saucepan add onion and soften slightly before adding the carrot and celery and sauté until vegetables are tender (5-8 minutes).

Return the duck pieces to the pan, add the wine, stock, tomatoes, seasoning, bay leaves and rosemary.

Cover and cook slowly for about 1¾-2¼ hours, until the meat looks as it will be easy to separate from the bones.

Leave to cool. The fat will rise to the top making it easier to remove.

Reheat the duck braise very briefly, just sufficiently to melt the jelly.

Remove the duck pieces and set aside. When they are cool enough to handle remove the the skin and strip the meat from the bones in chunks. Discard herbs and the bones.

Drain the solids from the liquid and add these to the duck. Place the liquid from the braise (i.e. that is yet to be reduced) in a separate container.

Wipe the pan and use some of the fat to sauté the mushrooms and garlic. Add parsley and thyme and some seasoning.

Deglaze the pan using about a cup of liquid and evaporate most of it. Repeat with the left over liquid until it has reduced.

Add the duck, a couple of twists of nutmeg and the ragù is ready.

Combine the cooked pasta with the duck ragù and serve.

A Sicilian recipe for Duck:

Anatra a paparedda cu l’ulivi (Sicilian Duck with green olives and anchovies)

PASTA E FAGIOLI (Thick bean soup with pasta)

These colourful beans are fresh borlotti; their pods look even more amazing. They are not in season in Victoria, they are coming from Queensland, but I bought some last week at Stall 61-63 in The Queen Victoria Market – this is where I buy all of my Italian vegetables. In Italy, when the fresh beans are available they are considered to be a treat.

Probably every region of Italy has a version of pasta e fagioli (pasta and beans) or minestra (soup) di fagioli. It is called pasta e fasoi in Trieste, pasta e facioli in Calabria, pasta ca fasola in Sicily and mnestra di fasö in Piedmont; the list goes on.

There may be a slight difference between the two dishes in the amount of liquid used, but they are both thick soups, and in fact so thick that they are also referred to as wet pasta dishes.

This version of the recipe is pretty universal all over Italy, but probably the greatest variation is that in various parts of Italy the cook places sufficient liquid in the soup to cook the pasta in it, whereas in other regions the pasta is cooked separately, drained and dressed with the cooked beans. Rice instead of pasta is more commonly used in the north of Italy.

Not every greengrocer sells fresh borlotti nor are they always in season but dry borlotti  (soaked overnight)are also widely used for this dish. Do not add salt to the water when cooking dry pulses – it makes them tough.

Fresh borlotti beans do not need to be soaked, but lose their colour when cooked. Soak beans in cold water overnight – they will swell so it is important to put them in plenty of water.

1 kilo of fresh beans will shelled left me with 450g; this is sufficient quantity for a plate of soup for 2-3 people.
Wet pasta dishes with pulses are commonly cooked plain and presented with a drizzle of oil.
INGREDIENTS
borlotti beans, shelled, 450g
carrots, 2 finely sliced
celery stalks, 2 in bite-sized slices
fresh bay leaves, 2
short pasta, 300 – 400g ( depending on how wet you like the soup)
onion, 1 finely chbut preferably keep them whole – this will depend on how fresh the dried beans are, but fresh borlotti will take much less cooking time. Add salt to taste.
Cook the pasta.
Either add more water to the pan and cook the pasta in the soup or cook the pasta separately – I like to add stock or water with a good stock cube, salt and freshly ground pepper
extra virgin olive oil, to taste
PROCESSES
Drain the beans if they have been soaking.
Place sufficient water to cover the pulses and add the carrot, the tomato, celery and bay leaves (this will be the broth).
Bring the soup to the boil. Add the parsley. Cook the pulses until soft (20– 40 mins), but preferably keep them whole – this will depend on how fresh the dried beans are, but fresh borlotti will take much less cooking time. Add salt to taste.
Cook the pasta.
Either add more water to the pan and cook the pasta in the soup or cook the pasta separately – I like to add stock or water with a good stock cube at this stage and cook the pasta in the soup.If you are cooking the pasta separately combine the cooked pasta and use the soup to dress the pasta.
Drizzle with extra virgin olive oil and freshly ground pepper or chili flakes (as is more common in the south of Italy) and serve.
SOFFRITTO
I sometimes like to garnish this soup with a soffritto:
Heat about ¾ cup of olive oil in a wide pan, add a clove of finely chopped garlic and the parsley (use the parsley in the soffritto instead of cooking it in the soup).
Sauté on high heat – it should sizzle and the parsley turn bright green – then pour over the soup.
