SENAPE, a new type of mustard green vegetable

The Italian word senape, is mustard in English, therefore it is very appropriate that this green, leafy vegetable is called Senape.

A few weeks ago I bought one bunch from Il Fruttivendelo, Gus and Carmel’s stall in A shed at the Queen Victoria Market. Unfortunately, they have not been able to source any since.

I did some research and apparently – sinapis arvensis grows wild and around Ragusa in Sicily where my father’s relatives live. More research tells me that these leafy, mustard greens are also common around Etna and the Madonie Mountains.

I  remembered that I encountered Senape (also called Sanapu and Sinàpi) in the Market in Syracuse in 2007 and now realise that I also have a photograph of this wild green in my book, Sicilian Seafood Cooking.

The bunch I purchased at the Queen Victoria Market is obviously the cultivated variety of Senape and it tastes very much like one other mustard tasting, leafy green of the Brassica tribe, Cime di rapa (broccoli raab, also known as rapini),

Recently, I was away camping for a couple of weeks and i do enjoy forging. apart from wild lettuce I picked two varieties of wild Brassicas. One variety, I am quite familiar with and I have written about this one many times; it looks and tastes like canola plants, the wild version. I notice that several Australian references call them ‘Wild Cabbage’. Sicilians may call them amareddi or cavuliceddi, rapudda, rapuzza, sanapuddhi and many more local terms.

The photo below demonstrates how in this plant’s advanced stage this variety looks so much like broccolini.

The other variety of wild green I foraged had an intense, fiery mustard taste with a hint of bitterness (photos below).

They tasted fabulous and after some research I think that in Australia these are referred to as ‘Mustard Greens’ and they could be related to the cultivated Indian mustard plant.

Both types have tiny, yellow flowers and unopened buds, similar to the distinctive flowers in broccoli heads,  the same as the Cime di rapa, or the bunch of Senape that I hope to be able to purchase again.

In the wild I foraged and collected the tips – the soft leaves and flowers of both of these wild plants.

In some places  there were plenty around and I made the most of them.

I cooked one harvest with Italian pork sausages and pasta, other yields with cannellini beans and plenty of shaved pecorino and another pasta dish with anchovies and feta.

It is a common practice to cook Cime di rapa or wild greens from the Brassica family by boiling them in plenty of salted water and once cooked they are drained before sautéing in the oil, garlic and chilli. I always omit the pre-cooking  phase and sauté the greens directly with the flavourings.

One disadvantage perhaps of not boiling the greens first is that I cannot use the drained water from the greens to cook the pasta, this being popular with Sicilian cooks. The pasta takes on a green hue and some of the flavour of the vegetables, but I prefer sautéed greens that still have some bite in them.

I cooked the bunch of the  Senape (about 500 gr) I bought from the QVM with ossocollo (smallgoods/cured pork neck), 3 cloves of chopped garlic, about 4 tbs extra virgin olive oil, salt and chilli flakes (or use fresh chilli). Speck or pancetta is also a good substitute for ossocollo, I chose this because I had some in my fridge.

Unlike the preferred quantity of 100g of pasta for each person, I think that 300g of pasta is sufficient for 4 people, however you may disagree.

Clean the green vegetables.

Fry the garlic and chilli, add the ossocollo and leave to  lightly brown in a pan.

Add the Senape and sauté it. I added some salt, a splash of white wine, put the lid on and cooked it till I was satisfied with the degree of done-ness.

Dress the drained pasta. I always like to drizzle some fresh extra virgin olive oil on the finished dish to add fragrance and accentuate the taste.

No grated Parmesan on pasta in Sicily, leave that to the northern Italians!

Parmesan can only be called Parmesan if produced in the neighbouring historical regions of Parma and Reggio (in Italy’s Emilia-Romagna). It is given the DOP label by the European Union (Denominazione d’Origine Protetta/Protected Designation of Origin). The DOP label guarantees that the product is “authentic,” or made in the original town or region with proper ingredients and process.

Use Pecorino, a strong-tasting alternative for a strong tasting dish. Pecorino is made from sheep’s milk and  Pecorino cheeses that have DOP protection are the Pecorino from Sardinia, Lazio and the Tuscan Province of Grosseto and Pecorino Toscano from Tuscany, and from Sicily.

CIME DI RAPE (or Rapa) with pasta, anchovies and lemon peel

It is the season to demonstrate again my recognition and enjoyment  for  Cime di rape (Cime di rapa is the singular). Also known as Rapini or Broccoli Rabe in some other parts of Italy and of the world. This exceptional, slightly bitter, mustard tasting, green vegetable is a brassica and a winter green and I make the most of it while it is in season.

I cooked a bunch last night of “Cime ” as they are generally called, with anchovies for a pasta dish.

Cime di rape are not easy to buy, for example there are only three stalls that sell it at the Queen Victoria Market and you cannot rely on all three having it,  but if it is available, it comes home. Some good green grocers also sell Cime di rape, especially those businesses with Italian heritage or that are in locations where Italians shop.

The flower heads are green at the moment, but they will have yellow petals later in the season as demonstrated in the photo below.

Cime di rape, are traditionally cooked with orecchiette (little ears shaped pasta) originating in Puglia, but these  green leafy greens are also grown extensively in the Italian regions of Lazio and Campania and further south; they are not as traditionally popular in northern Italy.

I cook the greens as a  pasta dressing or as a side dish to gutsy dishes of meat or fish or pulses. They are not a delicate tasting green and therefore need  strong flavours – garlic, chillies, strong tasting cheese.

As a pasta sauce they can include the flavours already mentioned and / or be enriched by the addition of pork sausages,  a few slices of a strong tasing salame or ‘Nduja (a soft, spreadable, pork salame originating from  Calabria and with a high content of  chilies.)

Another strong taste  to add are anchovies. I like to add a substantial amount, but I am careful about adding salt to the greens when I sauté them in strong tasting extra virgin olive oil, garlic, and chilli.

The whole bunch can be used and not just the leaves and flowers. Like when cleaning broccoli, the tougher stems/stalks can be stripped of their tough, green layer. There is little wastage.

When I made the orecchiette with Cime di Rape last night I also added grated lemon peel. A friend had  just picked some very fresh lemons from her friend’s property. They were so fragrant, I could not resist them.

The anchovies have to be cut finely and tossed about in some extra virgin olive oil to dissolve/ melt. This happens quickly.

The melted anchovies can either be added to the sautéed  greens  after the pasta and greens have been tossed together and are ready to serve, or at the beginning i. e. sauté the anchovies, add the garlic and chillies in the oil for a couple of minutes before adding the greens and cook.

Use strong tasting grating cheese like pecorino. Last night I used some Aged Goat Gouda cheese instead. Sometimes I top the pasta with feta, this is not traditional, but it is good to experiment.

The lemon peel can be added either during cooking or at the end.

Melbourne – August: Winter Artichokes in risotto and stuffed

Fresh  produce is very important to me and I am fortunate to live in an apartment block very close to the Queen Victoria Market and good, fresh produce is not hard to get.

Pre-lockdown restrictions, I also shopped  at various Farmers’ Markets, but this option is not available for me at the moment.

These artichokes were bought last weekend  at the QVM and I was surprised by their very green colour. This variety of artichokes are local and are in season; they are different in appearance to the three other varieties I am familiar with available earlier in the season.

During the week I bought these baby artichokes. These babies are from the artichoke plant when it has reached the end of its season. The plant does not have the energy to produce  the full type variety and produces these little offshoots. Usually they are used for pickling. Notice that this variety is tinged with purple, unlike the bright green variety of artichokes in the photo above.

You may ask what is the bunch of greens next to the baby artichokes? Cima di rapa (or cime di rape, plural). These are at the end of the season and I was surprised to find them  in such good form.

This is what I did with the big artichokes:

Stuffed with fresh breadcrumbs, grated Parmesan, garlic, parsley and extra virgin olive oil and braised in white wine, stock and extra virgin olive oil and with potatoes. I often use potatoes to hold the artichokes upright in a pan; the liquid should reach below the top of each artichoke. The potatoes are delicious as they soak up the flavours of the artichoke braising liquid.

Artichokes that are stuffed should fit tightly in a pan and in this case I have used the stems to keep the artichokes secure:

And what did I do with the baby artichokes?

I braised them once again in stock, white wine and extra virgin olive oil and once cooked I used the braising liquid  from the cooked artichokes in the risotto.

For the risotto:

Sauté garlic and onion in extra virgin olive oil. Add the rice and toss around in the pan till well coated. Drain the stock (braising liquid from the artichokes) from the artichokes and add it warmed  -gradually and intermittently as you would for making any risotto.

Add parsley about half way through cooking. Add the artichokes and a lump of butter at the final stages  and when the final  absorption of stock is occurring. Do not forget, that a risotto should not be dry… present it all’onda…meaning that the finished product should ripple like waves.

Present it with grated Parmesan, if you like.

Sometimes  I prefer to taste the natural flavours of  the dish and grated cheese can be overpowering.

The old autumn favourites are back.

I have bought Cime di rapa, sautéed them with Italian pork sausages (chilli flavoured) and ate them with orecchiette and grated, strong, pecorino cheese.

There were artichokes, fennel and even chicory for sale, and because of the colder weather the heads of red Radicchio seemed firmer than two weeks ago.

This week one friend dropped off a bag of  fresh lemons from her father’s tree. A generous amount. and a welcome gesture.

I had a couple of quinces left over from last week and I added  slices of four large lemons when I baked them.  Yet again, I baked the quinces with different flavours. Honey as the sweetener and Tuaca from Livorno –  this is a sweetish, golden brown liqueur, and the ingredients include brandy, citrus essences, vanilla, and other secret spices – probably ordinary simple cinnamon and nutmeg .

I included quite a few black peppercorns, cinnamon quills and star anise in the mix.

The lemons turn out like marmalade, only crispy at the edges…I like the texture and intense taste.

I also added a dash of Vanilla and some water. It is not necessary to use ample amounts of alcohol unless you want to, but probably if you did, the taste would be superb.

Another surprise, another gift from different friends who live in Red Hill. On their morning walk they collected some saffron coloured, pine mushrooms (Lactarius deliciosus), also called  saffron milk caps and red pine mushrooms. He who works in the city on occasions let me know that he had some for me. The small mushrooms look fabulous left whole and perfect for showing off and the bigger ones get sliced… they are very meaty.

I cooked the mushrooms with garlic, parsley, sage, thyme, rosemary and nepitella and a dash of white wine.

The mushrooms made a flavourful pasta sauce and went well with the home made egg tagliatelle.

Making pasta is easy – 100g of flour per egg. I use hard flour (durum wheat, high protein, the same as I use for making bread).

I used 300g of flour and 3 eggs and this fed two of us with a small bit left over for a snack the next day.

Place the flour in a bowl. Make a well in the centre, crack the eggs into it, add a bit of salt and stir the eggs with a fork.

Use your fingers to mix the eggs with the flour, incorporating a little at a time, until everything is combined.

Knead to make one smooth lump of dough.

You can also make your dough in a food processor –  put everything in, mix with the paddle attachment until the mixture looks like breadcrumbs, then remove the attachment and use your hands and bring the dough together into one lump.

I then divide the large ball into 3 smaller lumps, wrap them in film and put it in the fridge to rest for about 1 hour or so. The approx. 100g quantities balls makes it easier when you roll out the pasta or feed the pasta through the rolling machine. Flattern the ball before you feed it through, do this several times before you use the tagliatelle cutting section of the pasta machine.

During the week I also made some pasta made with rye flour and with a rolling pin flattened each ball between two pieces of  baking paper. Cut into strips.

Very simple.

PASTA with ‘NDUJA, CIME DI RAPA and PORK SAUSAGES

I have been away from home recently, and what I really enjoy is coming up with a dish using ingredients that I have…and need using up. This must be one of the reasons I enjoy camping and we always eat so well.

I had ‘nduja (a soft chilli-laden, soft salame from Calabria), a bunch of cime di rapa or rape (rape is plural of rapa) and some small and fabulous, pure pork sausages that I had cooked in some tomato salsa the day before. We had eaten most of these with polenta and these were left over.

What I did was simple. I braised the cime di rapa  in some garlic and extra virgin olive oil as I do when I cook cime di rapa with pasta.  Once cooked, I added the ‘nduja….probably too much, I love chilli but do others like it as much as I do? I could have used a half of the quantity and it still would have tasted great. The ‘nduja melts with the heat and coats the vegetables.

Next, I added the sausages and only a little of the tomato salsa. I was making a pasta sauce and not a soup a , so I needed just a little liquid.

I had rigatoni on hand, and some Sicilian pecorino pepato.

You will need to accept that it tasted vey good. So much so, Squid, that I did not have time to take a photo – it was gobbled up far too quickly by my two guests.

BITTER GREENS and AMARI (Aperitivi and Digestivi)

When I was a child and had a tummy ache my mother used to give me an infusion of chamomile – and I bet that many other Italian children experienced the same remedy. I was also given it when I could not sleep and she rinsed my hair with chamomile – it was supposed to keep it fair and make it shiny. Chamomile was a magic herb.

My father asserted that a canarino (canary) was better. It is made by boiling lemon peel in water. This concoction was another multi-purpose panacea used for tummy aches, nausea, insomnia, colds, coughs, sore throats and fevers when you felt cold and shivery. He also would share hi Dutch salted liquorice with me – aniseed and fennel are renown for assisting digestion.

My father’s sister who lives in Sicily is a great advocate for the healing and nutritive properties of carob. She claims it cures respiratory tract infections and it treats diarrhoea.

I was told that the more bitter the green, the better it was for my liver; the stimulation of bile flow was important to break down fats.

My family always ate large quantities of bitter greens – all the  different types of radicchio (we lived in Trieste where it was plentiful). The photo above: radicchio Triestino – a very small leafed variety of radicchio.

There were different types of chicory, Belgium endives (whitlof), rocket, escarole, cardoons and globe artichokes. Vegetables that have strong sulphur smells like cime di rapa or cime di rape, Brussel sprouts and radishes were also favourites.

When we visited Sicily, our relatives made sure to feed us edible weeds (erbe spontanie) – matalufo, agghiti (in Ragusa’s dialect), bitter chicory, different varieties of mustard greens and brassicas, wild rocket, puntarelle, wild fennel fronds and wild asparagus – the two types of wild asparagus are particularly bitter. So, as you can see, because of my history and my Italian culture I had my digestive health covered.

As an adult, I had an inherent appreciation of bitter flavours and much appreciated an Amaro, not just because I liked the taste but because I believed that it aids digestion.

Amaro (Italian for “bitter”) is usually drunk as a digestive before a meal (an aperitivo) or after meals (a digestivo). There are many local and regional versions of these alcoholic beverages – examples of some well-known Amari are Aperol, Averna, Cynar and Fernet-Branca.

These bitter, alcoholic beverages are usually referred to as being herb based, but they are made of various and numerous vegetables, fruit, berries, bark, flowers, herbs, roots and spices macerated in alcohol diluted with water to obtain the desired gradation. They are also sweetened and range from bittersweet to intensely bitter.

The oldest recipes for herb-based beverages were usually formulated by pharmacists, botanists, and enthusiasts, many in monasteries and convents. The recipes have been developed over time by wine and spirit companies and the alcohol content of Amari varies between 11% and 40%.

Restaurants in Italy may offer a dozen selections of Amari, especially after a meal, but unfortunately, Amari are not beneficial aids to digestion – the beneficial properties of the herbs are reduced or eliminated and the higher the alcohol content, the slower the breakdown of food.

If you want to eat more, it makes sense to drink an Amaro as an aperitivo – the bitter flavours may stimulate the taste buds and increase the secretion of saliva and gastric juices.

Aperol has an alcohol content of 11%—less than half that of Campari. Averna is considered an excellent digestive liqueur, but the alcohol content is 29%, Ramazzotti is 30% and Fernet is 40%.

Aniseed liqueur is distilled from the fruit of the green aniseed plant along with other aromatic ingredients – but Sanbuca is 48% alcohol.

If we really wish to help our digestion after a meal, we may be better off with the simple home-made infusions. Popular home-made infusions, apart from chamomile, often contain fennel seeds, peppermint, sage, ginger and rosemary.

I still enjoy my bitter greens and since living in Australia I have broadened the range of bitter greens that I eat – watercress, dandelions, the wide range of Asian mustard greens and varieties of kale and frisée.

Minesta in Italian means soup. But it does not stop there – minestrone is a thick soup and minestrina is a more delicate or thin soup.  All minestre (plural) may or may not have pasta (or pastina) or rice or grains added to thicken them.

Then there is zuppa and this Italian word shares the common root with soupe (French), suppe (German) and sopa (Spanish and Portuguese).  These days the differences between a minestra and a zuppa are probably interchangeable and there are always regional and cultural variations (as the Calabrese minestra below), but a zuppa relies on an accompaniment of a slice of bread; usually this is placed in the bowl and the zuppa is ladled on top. The bread soaks up the juice and therefore no pasta, or rice, or grains (barley, wheat) are needed.  Traditionally, a zuppa has a broth base, whereas the liquid in a minesta is more likely to be water and relies on the vegetables, pulses, fish, meat (or smoked meat) for flavour. In modern times, recipes for minestra may include the addition of water, stock or broth as the liquid base .

So why am I taking such an interest in the specific Calabrese minestra?

I was recently in Adelaide and ate at Minestra, a small home style eatery in Prospect and ordered minestra with my pork and veal and eggplant polpette – the minestra in this case was presented less soupy and more like a side for the polpette, but it could also be ordered unaccompanied as a one course dish – with a little more liquid and more a like soup.  It is not only the food that I like at this eatery where the daily menu is chalked on a black board, and when they run out of a dish, they erase it. The other exciting change to the menu is that it can feature produce the locals bring in … YES, like the sign below says: locals are invited to bring in their produce.

Minestra’s owner and head chef is Sandy Cenin (as you can see by the surname there is a bit of northern Italian in him) and his grandmother is Calabrese.

Inspired by Sandy’s minestra, once home in Melbourne, I was determined to conduct some research and to make it.

Minestra in Calabria takes on a different significance and is a traditional, peasant dish suited to the people who were used to working very hard on the land.  And it does not use pasta in this dish … the Calabrese have a reputation for being different (I say this as a pun). This Calabrese minestra has a certain degree of austerity about it, it is not sophisticated or complicated and it is made from simple frugal ingredients – wild greens if possible, and if one was lucky, perhaps a little pork. It also contains beans – dried broad beans or borlotti or cannellini. Hence the description of this minestra being maritata (married in Calabrese dialect) – several green vegetables and the beans (and bits of pork) are ‘married’ or combined to produce a very thick, stew like soup.  Some variations include potatoes and as for the pork, it can be fresh meat ribs or rind. I have also seen a recipe that includes the rind of grating cheese (pecorino) for flavourings.

In Calabria, as in Sicily, wild foraged greens are much appreciated and not just due to necessity (as they once were). In Australia we may not be familiar with the range of edible plants available or have access to as many, but we do have some very good, green, leafy vegetables that provide contrasting and strong flavours.

A mixture of three or four of seasonal, green, leafy vegetables, is sufficient –  I am using  endives (or escarole) and chicory, that are both bitter, cime di rapa (a brassica) for the mustard taste and sow thistle that was sold to me as milk thistle and tastes mild and grassy.

I bought this mixture of greens from my regular fruttivendolo at the Queen Victoria Market (see photo below). If I had foraged for dandelions (bitter taste) or wild broccoletii (wild brassica) I would have used these  instead of the more conventional chicory, escarole (bitter) or cime di rapa (mustard).

There are many brassicas that could be suitable – kohlrabi (root and leaves), cabbage,  kale (not Italian, but who cares!), cavolo nero, cauliflower, broccoli, Brussels sprouts (not a Calabrese vegetable)and cabbage.

Wild fennel, amaranth, nettles are also wild greens that could be accessible to you or you may be growing borage in your garden (photo below).

I am going to be Italian when I write this recipe. There are no measurements for the ingredients but my photos can give you an indication and it is ‘cucina povera‘- peasant cooking – that is, use what you can get, make it to your taste, add as much liquid as you wish, but keep it thick.

Use a variety of green leafy seasonal vegetables – whatever you can get – go for combinations of taste – bitter, sweet, peppery, grassy, aniseed taste (as in fennel).

RECIPE for minestra

Soak, cook pulses (borlotti, cannellini, dried broad beans) … or buy tinned beans if that is what you do. In my photo you will see that i have used black-eyed beans – this is not an Italian bean, but it is what I had on hand at the time and I do not think that my breaking of tradition mattered. Drain the pulses you intend to use. Keep the liquid (broth) in case you want to add it as the liquid for the minestra.

Clean the greens, separate them from any tough stems but keep the softer ones.

Soften the greens – boil them in as much or as little salted water as you cook all your green leafy vegetables. Drain them but reserve some liquid for the minestra. I did not have to discard any because I did not use much water to cook my greens.

Chop garlic ( I used quite a bit), sauté the drained greens, add  beans. My ratio was about 2/3 greens and 1/3 beans.

Add chopped chilli at the same time as the garlic if you wish or serve chopped chilli or chilli paste separately (Calabresi a fond of pepper paste). 

Add as much liquid as you wish, dish it up, drizzle some extra virgin oil on it and eat it with some good bread.
