MACCU (a thick, broad bean soup, made at the end of winter to celebrate spring)

This is a photo of mature broad beans taken in the Palermo Market. If you were keen, you would extract the beans from the pods, dry them and store them. Now days  you would buy them dry.

‘You must try the maccu,’ urged my host as we perused the menu in a small restaurant in the back blocks of Palermo. ‘It’s one of our local specialities.’ A wide, shallow bowl was filled with a drab beige puree enlivened by a spiral of olive oil. I tasted it and in an instant understood that this was minestra di fave, the puree of broad beans that had sustained people throughout the Mediterranean in the 14th and 15th centuries, a dish familiar to me from many culinary manuscripts. The taste was pure, elemental, almost mono-dimensional, but enhanced with the timelessness of tradition. With every spoonful I was connected to civilisations past, from medieval to Roman and even back as far as ancient Greek and Egyptian. And when I harvest my broad beans each spring, the echo of this experience returns.

I am always thrilled to read anything by Barbara Santich. Her writing is always rich in detail, well researched and a pleasure to read.

Maccu, is a traditional Sicilian very thick soup and in most parts of Sicily it is made of dried fave (broad beans). It is mostly cooked over the winter months and as Barbara informs us , it has been a staple dish for the contadini (peasants) since ancient times.

In some parts of Sicily it is also a celebratory dish cooked at the start of spring. Spring in Sicily has a particular significance for me because March19 was my father’s name day. It is the Feast of San Giuseppe (Saint Joseph); this feast also coincides with the spring solstice and in many parts of Sicily maccu is particularly eaten on this day.

Maccu is a recipe with spring sentiments of renewal, use up the old, celebrate the new. To make maccu, the dried beans of the last season are used before the new harvest begins in spring. Broken spaghetti and any assortment of left over, dry pasta shapes are also added to the soup and particularly in the days when pasta was sold loose, there used to be quite a few pasta casualties. Many of the religious celebrations have pagan origins; the feast of Saint Joseph in the Catholic religion is at the end of Lent, a time traditionally used for fasting, both in the religious sense and over the lean winter season.

Dried fave (broad beans) are the main ingredient. They are light brown and smooth and shaped a little like lima beans. And because they have a very tough skin, they need to be soaked and peeled before cooking. As you would expect, there are local variations in the recipes. In some parts of Sicily a mixture of pulses are used – lentils, beans, chickpeas and some recipes include dried chestnuts. The greater selection of pulses is found in Il grande maccu of San Giuseppe, the grandest soup of them all. Wild fennel is added to most versions – it adds colour and taste. Those of us who do not have this, can use fennel seeds and a few fennel fronds; a little green leaf vegetable like cime di rape, chicory or silver beet (Sicilans would use the wild beets) will also add the green colour. Some recipes include a little chopped celery, others have dried tomatoes (they would be kept under oil over the cold months).

I realize that it is not March, but in Australia we are looking forward to spring which starts in September and writing about maccu now seems appropriate.

This is a recipe for a very simple maccu.

INGREDIENTS
dry broad beans, 500 g (use a variety of other dried pulses if you wish)
wild fennel, one bunch ( or fennel seeds, crushed, 2 teaspoons and fresh fennel fronds)
onion, 1, cut finely
salt and freshly ground pepper to taste
extra virgin olive oil

PROCESSES
Soak the dried broad beans overnight.
Drain them and peel the outer skin off the broad beans.
Cover the legumes with an ample amount of water, add fennel seeds and cook the soup slowly. After about 40 minutes add the onion, fennel (and some small amounts of chopped greens if you wish). Continue to simmer for another 30 minutes. To prevent the pulses from remaining hard, add the seasoning after the pulses are cooked. If you wish to add pasta, add more water, bring to the boil and cook the pasta in the maccu.

Drizzle with generous amounts of extra virgin olive oil and serve (I do this at the table and on individual portions).

In some parts of Sicily, left over maccu is also eaten cold (the pulses solidify).

In the feauture photo the maccu is served with Lolli,  a type of hand-made pasta still customary today in the Modica area.  I ate this in Trattoria a Punta Ro Vinu in Modica.

ZUPPA DI PISCI A SIRAUSANA – ZUPPA DI PESCE ALLA SIRACUSANA (Fish soup from Syracuse)

You can see from the photo taken when I was last in Syracuse, that fish is plentiful in their markets.

I ate zuppa di pesce as often as I could in Syracuse – rich and fragrant and made with a great variety of fish; one zuppa had a greater variety of molluscs and also included octopus.

The zuppa di pesce (also known as ghiotta di pesce) from Syracuse is a signature dish. It is different from other zuppe di pesce because unlike cucina povera (food made from very meagre ingredients) it is made with quality, prime fish. It contains powerful flavours and is very aromatic.

A zuppa in Sicilian and Italian is a soup (zuppa, a word from Middle English and French soupe). A zuppa di pesce is usually served over slices of bread like a bouillabaisse. Sometimes it is also called a ghiotta di pesce because it is cooked in a tomato-based stock.

The line dividing a fish braise from a zuppa di pesce is blurry. Generally a zuppa contains more liquid and a braise will involve cooking in a small amount of liquid that is reduced and concentrated.

I do buy a mixture of whole fish and fillets. Do not associate cost with quality. Fish with bones (like meat with bones, add flavour).

I have chosen a very simple recipe. Naturally, Sicilians can’t help using some wild fennel (if it is in season) and a few ground fennel seeds would not be wasted.

Suitable fish:
A variety of seafood is preferable, but avoid oily fish (like sardines, tailor, mackerel, Australian salmon, trevally). Select at least:
• two different types of fleshy fish. I use: flathead, leatherjacket, albacore tuna, all types of whiting, snapper and blue-eye trevalla if line caught (better choice). Red emperor, snapper, blue-eye trevalla (think twice and if line caught are in the better choice category).
• one crustacean – green (uncooked) shellfish –prawns, lobster (mostly in the think twice), crabs and fresh water yabbies (better choice)
• one cephalopod – cuttlefish, octopus or squid (better choice).
• one mollusc – mussels and vongole (also known as pipis) are the most common in Australia (better choice).

INGREDIENTS
fish, 1.5 kg, mixed.
tomatoes, 500g peeled, seeded, and chopped
extra virgin olive oil, I/2 cup
celery heart, 2 – 3 pale green stalks and leaves, chopped
salt and freshly ground pepper
bay leaves, 3 – 4, fresh
garlic, 4- 8 cloves, chopped finely
flat leaf parsley, 2 tablespoons, chopped finely
water, 1 litre

PROCESSES
Prepare the fish: You will need chunks of fish for this recipe (for convenience you could use fillets). Clean, shellfish, molluscs and squid appropriately and cut into mouth-sized pieces.

Make la ghiotta in a shallow wide pan, large enough to accommodate the fish and the ingredients.
For the ghiotta:
Soften the celery in the extra virgin olive oil, for about 5 minutes.
Add the garlic, tomatoes, seasonings and herbs, cover and allow this to simmer gently for 10 minutes.
Add as much water as you think necessary and bring the ghiotta gently to the boil – it is a thick soup.
Add the fish, cover and gently poach it for 5-10 minutes or until the fish is cooked to your liking. Do not stir or move the fish around during cooking or it is likely to result in the fish breaking up.

Serve with crisp, oven toasted bread.

VARIATIONS

  • For additional flavour I use fish stock rather than water.
  • Some of the restaurateurs I spoke to also add a thin peel of orange peel.

KOHLRABI with pasta (Causunnedda )

Kohlrabi are called cavoli in Sicily and in Italian it is cavolo rapa.

Cavolo is the generic term for some of the brassicas, for example cavolo verza is a cabbage, cavolo nero is Tuscan cabbage, cavolo rosso is red cabbage.

In Italian cavoli are cauliflowers.

Just to confuse things even further, Sicilians call cauliflowers broccoli.

As well as the purple coloured Kohlrabi roots there are light green ones; the root is always sold complete with the leaves and the whole plant is eaten.

Kohlrabi in Ragusa is either eaten boiled as a vegetable side dish with a dressing of extra virgin olive oil and a squeeze of lemon juice, but the preferred way is to cook it with pasta, as a wet pasta dish.

The photo above is of me during one of the many visits to Sicily. I am collecting the bunches of kohlrabi with their abundant green leaves from their ortalano (seller of fruit vegetables), who came around every morning – excluding Sunday – with his van to sell his vegetables.

The kohlrabi I am able to buy at the Queen Victoria Market are always much bigger than the ones in the photos (purple ones are from market in Syracuse) but because the plant is picked when large, the leaves are not as tender.

I could never say that the version I make is as tasty as the one my relatives in Ragusa make. For a start, they make it with home made pasta (called causunedda) and they also put in strips of cutini (cotenne in Italian, pork skin in English) to flavour the broth.

The cutini (from fresh pork) are common in Sicilian cooking especially in Ragusa. They are eaten stuffed, rolled and braised as a secondo (main course), but mainly added to soups (especially pulses) and nearly always as an ingredient to make a strong sugo to dress pasta or the ravioli di ricotta (a local specialty from the south eastern part of Sicily).

Because I do not make my own causunnedda, I buy Sardinian gnocchetti shaped pasta (called gnochetti sardi) or casarecce.

RICOTTA RAVIOLI and STONE GROUND FLOUR

Kohlrabi is an autumn – winter vegetable and it is amazing how something so simple can taste so good.

Clean the greens and separate them into manageable pieces; peel the kohlrabi root and cut into bite sized pieces.
Boil them in salted water (add strips of fresh pork rind if you wish). The water will be used as the broth to cook the pasta so calculate the amount of liquid carefully. (There doesn’t need to be abundant amounts of liquid, that is, not as much as you may use to cook pasta as you do normally because the pasta does not get drained).

When the vegetables are soft, drain them, but save the water and the rind.

Cook the pasta in the broth.  Return the vegetables to the broth and pasta. If there still is too much liquid, remove some. When my relatives cook it it looks like a wet pasta dish and is not floating in liquid, but you must not forget that the pasta cooked in the broth adds some starch to the broth and thickens it.

Add chopped chilli or chilli flakes. Now for one of the most important parts -dribble with your finest extra virgin olive oil and serve.

Grated pecorino is placed on the table as an option.

The Ragusani also cook the causunnedda with dried  borlotti beans in winter and with fresh borlotti beans when in season. In spring fresh broad beans are used.

SFINCIONE DI PALERMO (A pizza/focaccia type pie)

One of my regular readers (from Philadelphia) is passionate about Sicily. She has sent me some wonderful photographs from her trip (mainly from Palermo) and she has very kindly given me permission to use them on my blog.

I asked her about this particular photograph because I could not identify what was being served. The photo was taken in front of Antica Focacceria San Francesco during Sunday brunch (al fresco). The piazzetta in front of the Antica Focacceria is across from the wonderful church of Saint Francis of Assisi which has the sculpture of Serpotta.

She has identified it as a sfincione di Palermo. It is a type of focaccia /pizza sold in the streets of Palermo but also known in some other parts of the north- western part of the coast. There are many bread dough /focaccia like pastries made all over Sicily with different fillings and called by different names.( See  ‘MPANATA (A lamb pie, Easter treat)

Sfincione is definitely a recipe from Palermo. It has a bit of a unique appearance and is baked for a short time with about 1/2 of the sauce, then taken out of the oven and recovered with the remaining sauce, “dredged with fried bread crumbs” and baked again.

It is the bread crumbs in the end that give it the look.

A typical recipe for Sfincione is:
500 gr. bread dough, 500 gr. fresh tomatoes, 100 gr. fresh caciocavallo or provola cheese (cubed), 50 gr. pecorino (grated) 50 gr. bread crumbs, 4 anchovy fillets, 1 large onion, a bunch of parsley 125 ml olive oil.

Prepare a basic pizza dough using fresh or active dry yeast, warm water, a little salt and approx. 3 cups of good quality unbleached flour. Leave it to prove in a bowl covered it with a folded tea towel/ tablecloth for about an hour.
Work about 1 glass of olive oil and the grated cheese (the pecorino) into the leavened dough. Leave it to prove again till doubled in size.

The tomatoes are made into a salsa: soften the sliced onion until golden, then add the parsley and the peeled, chopped tomatoes. Simmer till thickened
(about 20 minutes). Allow to cool slightly.

Add the anchovies and the caciocavallo.

Oil a deep sided baking pan and spread out the dough to about 3cm thick. Using your fingers make a few depressions into the dough.

Pour half of the sauce over the dough and bake it in a hot oven. After about 15 minutes, pour on the remaining sauce and dredge with fried breadcrumbs.

Drizzle with a little more oil and bake it for about 30 minutes.

CARRUBA (Carob) and its uses

 

This is a carob pod- dark brown and leathery and they range in length between 10-30cm in length.
There is also a carob pod in old Sicilian plate with the lemons in the feature photo.

The photo of carob trees was taken in the province of Ragusa (south-east of Sicily and where my fathers relatives live). The area is abundant in beautiful carob trees – a protected vegetable crop in Sicily. In Italian the word for carob is carruba. The stone walls are characteristic of the area.

Now to the other side of the world!

I have friends in Seymour and others in Euroa (Victoria, Australia) and I visited them last weekend. My friends who make excellent, award winning wine (Rocky Passes Winery) introduced me to Palmanova extra virgin olive oil (also from the same region) and I have been buying this for couple of years. Last Sunday I went to the market in Avenel (a small, interesting town in between Seymour and Euroa) to collect my bottles of oil and was delighted to find a number of other stalls selling local quality produce – organic vegetables, eggs, mushrooms, preserves and craft.

At this market, I was very surprised to find a stall selling carob and carob syrup – the couple who are growing and processing it live in Longwood Victoria. We do not have much of a carob growing and processing interest in Australia; I only know of one established plantation and industry in Burra, South Australia.

Last time I was in Ragusa (December 2007) I arrived there via a very cold Venice. I had a sore throat and a croaky voice, and Zia Niluzza who has a natural cure for every ailment, wasted no time in preparing for me a sciroppo di carruba. This syrup was made with a huge amount of carob powder and a little water, it was stirred in a pan to boiling point, and then allowed to rest for a short time so that the sediment of the carob powder settled). Carob is naturally sweet, but honey also has beneficial properties, and a spoonful was added to this brew.

I gargled and swallowed the elixir, and the next morning I was amazed (and thankful) – the potion worked.

Carob, (kibble) has a high sugar content and can be used as a flavouring in drinks, confectionery, cakes and biscuits. Carob seed is used to make a thickener for ice cream as a feed additive for stock. The kibble can also be used to make stock feed.

Especially in the province of Ragusa, carob is made into flour and when combined with a proportion of wheat flour, it is made into pasta and biscuits. Modica is another very beautiful, baroque city, very close to Ragusa and there carob is added to make chocolate products – chocolate manufacturing is a thriving industry with a tradition passed on from the Aztecs to the Spaniards and then to Sicilians (Sicily was controlled by the Spanish from the 13th to 15th centuries).

Zia Niluzza also makes a liqueur from carob and biancomangiare (blancmange – corn flour, water, carob and sweetening) .

If you live in Adelaide, there are some beautiful carob trees in the parklands next to the Children’s Hospital in North Adelaide
( I have collected many carob pods from those trees).

The couple from Longwood told me that carob is also known as St John’s bread – it is said that carob nourished St John in the desert. The references in the new testament are for locusts and wild honey. Wild honey is thought to be the carob. The tree is also known as the locust tree – the carob pods, because of their sweetness attract many insects and birds to it.

I almost feel like ending this post with a blessing!

CARCIOFI IMBOTTITI (Stuffed artichokes)

There are two words for carciofi in the Sicilian dialect, cacocciuli. and carcioffuli.
The Italian word for artichoke is carciofo and carciofi is the plural. And were would Italian cooking be without artichokes?

My favourite way of cooking artichokes is the simple way that my mother has always cooked them. My maternal grandmother Maria (originally from Catania but who lived in Trieste for about 20 years) also cooked them this way. She used the same mixture to stuff sardines, tomatoes and artichokes. I researched Sicilian recipes for stuffed artichokes and found that they are all braised in the same way, but there are regional variations in the stuffing, for example in some parts of Sicily they add mint, others include eggs, some minced onion, or more cheese and even salame.

In Australia, although artichokes are now widely available, they are still thought of as exotic and possibly difficult to prepare. Exotic? Yes, maybe – for their unique taste and appearance, but once you know how to prepare them, they are simple to cook. You may need to tell your friends how to eat them (most will attempt to eat artichokes with a knife and fork).

Selecting good artichokes is important. Time and time again I have chosen not to buy artichokes as they have been picked too late (too mature). I suspect that some of the inexperienced growers may think that big is better, however this is not necessarily the case (some of the green coloured ones can be large but also tender). And as with all vegetables, I never select ones that are bruised, blemished or withered

INGREDIENTS AND PROCESS
Select and clean the artichokes carefully (as described in my previous post, Carciofi – artichokes and how to clean them). Cut the bases off flat so that they can stand up in a saucepan. Select the size of the saucepan carefully – you do not want them falling over, the artichokes should be close together. Do not forget to include the cleaned stems to add to the braise and keep the artichokes in acidulated water as you work.

INGREDIENTS

I include one artichoke per person and each artichoke only needs 2-3 teaspoons of stuffing.

STUFFING: Combine the ingredients for the stuffing in a bowl. This ratio is good: 1 tablespoon of fresh breadcrumbs (made of good quality bread), 1 teaspoon of each – chopped parsley, extra virgin olive oil and grated cheese (you can use parmesan, but generally pecorino is traditionally Sicilian) and some chopped garlic to taste.

Drain the artichokes, spread the leaves (especially in the centre) and sprinkle salt and pepper in between the leaves. Push the stuffing mainly in the centre and if there is any left over, between the leaves. I use my fingers.

Arrange the artichokes standing upright in a pan, put the stems between them and drizzle well with more extra virgin olive oil. Add enough cold water to reach to about 1cm below the artichokes. Cook slowly with a lid for about an hour. Having lived in Trieste, I always add a splash of white wine and sometimes a little stock or a good quality vegetable stock cube to the poaching liquid.

If you are adding peas, broadbeans and/or potatoes just add them to the poaching liquid. The potatoes can go in at the same time, the peas and broadbeans about 15 minutes before the artichokes are cooked. ‘Those Italians’ would cook them all at the same time –they like their food overdone, but maybe they are right and there is more flavour.

I like to present carciofi as a single course – they are too fiddly to eat as an accompaniment to a main course.

WILD FENNEL and photos

Wild fennel is frequently used in Sicilian food to add a particular aniseed taste to many dishes. It can be cooked (see recipes for Pasta con le sarde and Ministra di finocchio e patate ) or added raw like any chopped herb, for example as in an olive or an octopus salad. The seeds are also used, for example scattered on bread before baking or to flavour marinades and preserves. 

These photos of wild fennel were kindly sent to me by one of my readers who lives in Philadelphia. 

She has travelled to Sicily several times and has also attended cooking classes there. She is aware about the differences in flavour between wild fennel and the bulb fennel. Since coming back from Sicily she has found a good source for wild fennel seeds and they are sprouting well in her North American garden in an apartment complex. 

She writes:
The gentleman in the blue work suit is holding wild fennel. We picked lots of it. My understanding is that you never eat it raw and that the “frilly” part at the top has tons of flavor unlike the typical fennel I find here with the large bulb where the frilly part has almost no flavor at all. 

I don’t think wild fennel has any bulb at all. It appears if anything, more like celery in that it is a simple stalk except with the frilly parts at the top.

RICOTTA FRISCA‘NFURNATA – RICOTTA FRESCA INFORNATA (Baked, fresh ricotta)

I love baked ricotta, but not the bastardized versions blended with eggs and herbs I have seen for sale. I do not know where these originated – not in Italy and definitely not Sicily!

I like to make the authentic, baked ricotta – unadulterated, white and fresh tasting in the centre, with a golden-brown crust. I particularly like it as a first course accompanied by a tomato salad and presented as a light meal.

 

Purchase the solid ricotta, in Australia usually sold by weight from four kilo shapes . The creamy variety sold in plastic tubs is not suitable.
In Sicily the ricotta is drained (on a rack overnight in the fridge) and just rubbed with salt and baked slowly uncovered until it becomes a dark golden colour. Sometimes, olive oil is rubbed over the ricotta before the salt is added, but not always. I also like to add a few herbs for flavour at the bottom of the ricotta while it is cooking and sometimes pepper (or red chili flakes) but this is not strictly traditional.

 

 

INGREDIENTS

ricotta, fresh and a solid piece

extra virgin olive oil, to coat the ricotta
herbs:¼-½ cup dried oregano, enough to sprinkle as a covering and on the bottom
fresh rosemary and/or bay leaves (optional) placed under the ricotta
black pepper, ¼-½ cup or dried red chili flakes, 1 teaspoon (optional)
salt (flakes or coarse), to sprinkle on top.

 

PROCESSES

The following cooking time is for a piece of ricotta weighing about 1 kilo.
Pre heat your oven to 180 C.
Oil the bottom of a baking tray, place a sprinkling of freshly ground black pepper, and oregano (also the bay leaves and/or rosemary if you wish to include these).
Place the lump of ricotta (or wheel) on top of the flavourings.
Oil, the ricotta lightly – use your hands to coat it.
Sprinkle with the salt (I use flakes) and oregano – use your hands to ensure that it is well seasoned.

Cover with foil and bake in a 180 C for 15 minutes . Remove the foil and bake uncovered until the it has just begun to turn golden brown – it may take about 40 minutes or more, depending on the size.

Allow to cool before eating.

Cover with foil – this dish will keep well in the fridge for 3 days. A perfect dish to prepare well ahead of time.

VARIATION
In a restaurant in Syracuse I was presented with warm baked ricotta sprinkled with a coating of toasted pistachio nuts.
To make this version, rub the ricotta with olive oil and a little salt. Add the nuts in the last 20 minutes of cooking.

It can also double up as a dessert if dribbled with honey.

MINISTRA DI FINOCCHIO E PATATE (Soup – fennel and potatoes)

Several of my friends are beginning to discover and appreciate the taste of fennel. It is prolific at present in Melbourne and most refreshing eaten raw. It can be cooked – braised, baked, made into a tortino (see recipe in blog tortino di finocchio) and as in this recipe, made into a soup (not a very common way to cook fennel).

Traditionally this recipe should be made with wild fennel and this is how I first tasted this soup.Obviously if this ingredient is not close by, the bulb can be used. If you can collect some wild fennel (make sure it looks healthy, see recipe in blog pasta con le sarde), experiment with this recipe and use both the wild and the cultivated bulb with some of its tender fronds and stalks (choose round, shiny bulbs, as in photo taken in the market of Syracuse).

It is one of the simplest soups to make and when it was first made for me (using wild fennel) all of the vegetables went into a pot with the water and once softened, broken spaghetti were added – soup without pasta is rarely presented. The broken spaghetti were once the way to use them up, by all means use some short, small sout pasta shape. 

I am always amazed how Sicilian soups cooked so simply can be so appetising. My relative presented the minestra with a drizzle of the very flavourful oil given to her by a relative in Noto. Maybe the oil is the secret ingredient! Boiled vegetables cooked this way and presented with the water is considered rinfrescante, calming and soothing for the digestive system and very common as the evening meal (Sicilians still eat their main meal at lunch time).

I have intensified the flavours by varying the method of cooking and I sauté the vegetables before adding the liquid, this being a common way to make soup in the north of Italy. I also like to add stock instead of water, but when I cook this version it is no longer traditionally Sicilian.

I also found a version of a recipe for maccu (a very Sicilian soup) made in the Madonie which is very similar but uses wild fennel , dried broadbeans (soaked overnight and peeled) and no potato. The dried broadbeans add a very different taste and as they are floury, also thicken the soup as does the potato.

INGREDIENTS 

potatoes 250g, cut into small cubes 

onion 1 large 

parsley,1cup of chopped 

salt and pepper 

bulb fennel 1-2 (about 600g), with green top leaves chopped and sliced very finely 

tomatoes 3 large peeled, chopped 

spaghetti 300 g of broken roughly into little pieces 

extra virgin olive oil ½ cup and some quality extra virgin to dribble on top 

bay leaves, 2 preferably fresh (optional) 

water,1 ½ litres (I use stock)

 

PROCESSES 

Traditional: 

Add all all the vegetables to the water and proceed as described above. 

Not traditional: 

Saute the onion in the oil until softened. 

Add the fennel and potatoes and stir till coated, add about 2 cups of liquid and the bay leaves . 

Cover and allow to braise very gently and without drying out for about 10 minutes. 

Add the tomatoes , parsley, seasoning and the rest of the liquid. 

Bring to the boil, add the pasta, stir , cover and allow to cook . 

Drizzle with the quality olive oil and sprinkle with fresh black pepper and serve.

SPAGHETTI CA SARSA MURISCA (Sicilian) – Spaghetti with Moorish sauce

IMG_2644Salsa moresca is an interesting name for a pasta sauce. The sauce is eaten in and around the town of Scicli, a beautiful baroque town not far from Modica (also beautiful) which is close to Ragusa (where my father’s relatives live). The ingredients are a combination of the sweet and the savoury and include bottarga (tuna roe), sugar, pine nuts, cinnamon and the juice and peel of citrus.

I was interested in the name – murisca (moresca is Italian for Moorish). The ingredients could well be of Moorish origins but it is also the name of a dance – la moresca. It is still performed in some regions of Sicily, especially on certain religious feast days.

The dance is said to have been introduced by the Moors into Spain and became popular all over Europe during the 15 th and 16th Centuries. Dances with similar names and features are mentioned in Renaissance documents throughout many Catholic countries of Europe – Sicily, France, Corsica and Malta – and, from the times of the Venetian Republic, Dalmatia – also through Spanish trade, Flanders and Germany.

La moresca is remarkably like the English Morris dance (or Moorish dance) a folk dance usually accompanied by music where the group of dancers use implements such as sticks, swords, and handkerchiefs. In Sicily they only use handkerchiefs, but this may have been modified over time. La Moresca and the Morris dance are considered to be one of the oldest traditional European dances still performed and inspired by the struggle of Christians against the Moors, in some places Christians and Turks, in other places between Arabs and Turks. In parts of England, France, the Netherlands and Germany the performers still blacken their faces but it is uncertain if it is because they represent the Moors. This custom is not observed in Sicily.

Each year in May, there is a sacred performance in Scicli that recalls the historical battle in 1091 between Arabs and Christians. Legend says that “La Madonna delle Milizie” came astride a white horse to champion the Christians. Pasta alla moresca is still cooked to commemorate this event.

Salsa moresca (the sauce for the pasta) is not cooked – it is an impasto – a paste or mixture, and probably traditionally made with a mortar and pestle.

INGREDIENTS: 500g long pasta, (spaghetti or bucatini), 150g grated bottarga, ¾ cup extra virgin olive oil, 1-2 chopped red chili, 2 cloves of finely chopped garlic, 4 finely cut anchovies, juice of 1 orange and 1 lemon, peel of ½ lemon, ½ teaspoon of powdered cinnamon, 1 large spoonful of sugar and 1 of vinegar,1 cup pine nuts, ½ cup finely cut parsley, 1 cup breadcrumbs ( from 1-2 day old bread) lightly browned in a little extra virgin olive oil.

PROCESSES

Pound all of the ingredients together preferably in a mortar and pestle: begin with the garlic the bottarga and anchovies. Follow with the sugar, cinnamon, pine nuts, breadcrumbs, parsley, peel and chilies – lubricating the paste gradually with the oil and juices as you pound.

Add the vinegar last of all.

And by now, having read about it, you can probably smell it.

Use this to dress spaghetti or bucatini. I scattered basil leaves on top to decorate the pasta dish.
